Puerto Rican Thanksgiving Turkey


1 whole turkey 12-18 lbs, thawed, giblets removed

24 cloves of garlic, minced

2 TBS + 2 tsp Adobo seasoning

2 TBS Sazón seasoning

2 tsp black pepper

2 tsp dried oregano

3 TBS olive oil

3 TBS white or cider vinegar


  1. Defrost turkey according to package instructions, remove the giblets, and pat dry. Place turkey in non-reactive container or extra large marinating bag.

  2. Mince garlic in mortar and pestle (or food processor). Add Adobo, Sazón, pepper, oregano, olive oil, and vinegar. Stir to combine.

  3. Using your fingers, gently spread the mixture underneath the skin of the turkey, both sides. Sprinkle the outside with 2 tsp of Adobo.

  4. Cover turkey and marinate for at least 4 hours, but preferably overnight.

  5. Preheat oven to 325 F. Place turkey breast side up on roasting pan with roasting rack. Cook uncovered. If you notice breast is getting too browned, cover with foil.

  6. Cook for 15 minutes per pound, until meat thermometer reads 16o F in the breast and 180 F in the thigh, basting occasionally. This should take 3-4 hours, depending on the size of your turkey.

  7. Remove from oven, allow turkey to rest uncovered for 30-45 minutes, carve, serve, and enjoy!
